Well it was a big realization, that this is the way it is. Not all pretty packaging and sanitation laws.
On the corner of Beimen and Fucian there is a large meat market. It is the sort of place that you get the cuts you want, the animals are still whole, and more often than not, probably have been slaughtered that morning. The bring in the meat around 4 AM, and I was lucky/unfortunate enough to catch a glimpse.
