Desert Bistro is a great little restaurant camouflaged as an old ranch house along 191. After seeing the menu item, "pistachio crusted Lamb loin served with fresh mint & chipotle pepper demi-glace", I knew I had to eat here. They had me at pistachio crusted lamb, the chipotle pepper demi-glace was just icing on the cake. With its amazing dishes and great location on the way back into town from the parks, Desert Bistro should be added to everyone's list of places to visit while in Moab.
